I have a lot of older karaoke DVDs. I would like to use a few tracks from each DVD to make my own compilation. Can this be done with this software?

No, it can't be done with the help of this application. You will need to use DVD Decrypter for this operation. Access its page at Software Informer, and you can obtain a link to its download package.
Open DVD Decrypter and go to Mode >IFO then access Tools->Settings. Go to "IFO Mode" tab, under "Options" section, change "File Splittings" option to "By Chapter", click "OK" to save. Then you can rip the DVD by each track. Save the files as VOB, and you can add them to another DVD.
